Slinky White Vermouth
In the pursuit of grooving to our own beat, we just had to do our own off-dry white vermouth.
Served chilled as an aperitif, over ice with soda water as a refreshment after a long day on the tools or in your favourite dirty dry martini or negroni. Accept no substitute!
CAMPBELL MATTINSON: mattinson:It’s made with white frontignac grapes, I believe, but whatever it was made with it’s an absolute beauty. It’s just so exuberant. Ripe white grapes, a huge bloom of orange peel, lemon zest, rosemary, brine and general citrus characters put on a delicious show. It’s nervy and dry but it feels like neither, courtesy of its fresh, harmonious, life-loving eagerness, both in scent and in flavour. This is $40 you won’t regret. Recommended? Hell Yes. WINEMAKING: We distilled a portion of the White Frontignac base wine at McLaren Vale Distillery and used the spirit to steep the botanicals in. wormwood, aniseed myrtle, finger lime and orange peel were used. We then added the spirit to the base wine and allowed to infuse for 6 months before hand bottling by Team Ramble.
