Vintage 2025 was a great Litmus Test to thoroughly assess how they can handle the conditions and ultimately long term “Are they going to work?”
We are delighted to say that the usual suspects in Arinto, Grillo, Montepulciano & Nero d’Avola have performed beautifully

Located on Chalk Hill Road, just north of the township of McLaren Vale between Angove’s Warboys Vineyard & Bondar’s Rayner Vineyard. Vines established in 2016 have now reached full maturity. Pollux is north-facing ensuring this late ripening variety achieves optimum maturity evenly in our warm mediterranean climate. The east/west gully that traverses the vineyard is a tributary to Peddlers Creek that winds it’s way to the Gulf Of Saint Vincent 12km away and provides perfect air flow at night during an increasingly common hot/dry weather event.

Wild yeast, no added acid, enzymes or fining agents. Post MLF SO2 addition only. Matured in old French oak puncheons for 6 months 100% whole berries are destemmed, cold soaked for 2 to 3 days prior to natural fermentation in open fermenters. Hand plunged twice a day for 7 days in small format vessels which enables better control of fermentation temperatures.
Bottled in June 2025 Only 864 bottles made.
